Hành mỡ (scallion oil) is an essential topping to a large number of Vietnamese dishes, including on bánh bột lọc that I am writing about next. You get the combination of flavourful of onion with the richness of the oil. I also like to spread it on corn on the cob, rather than butter. It is pretty easy to make, especially if you cheat and make it in the microwave!
Hành Mỡ (Scallion Oil)
* 1 bunch scallion, chopped thinly
* 3 tbsp olive oil
* ¼ tsp salt
Place scallion in a little microwaveable bowl.
Drizzle olive oil on top.
Add salt.
Microwave for a minute - you can also do this on a stovetop.
Mix the onion once it's done.
